Summer Fruit Salsa

Summer is here and it is time for pools, backyard BBQs, cookouts, summer produce, and lots of fresh fruit! This fruit salsa gives you a fresh, cool way to enjoy some favorite summer fruits!




Fruit Salsa
1 pint Strawberries
1 pint Blueberries
2 Apples
1/4 cup Sugar
1/2 Lemon or lime juiced

Cinnamon Chips
6 Flour Tortillas
1/4 cup Butter
3 tablespoons Buttered Cinnamon Toast blend


Preheat oven to 400°F

Finely dice strawberries and apples. Mix apples and strawberries together in a large bowl with blueberries. Add up to a 1/4 c sugar and juice from half of a lemon or line and mix thoroughly.
Cover and refrigerate for at least 30 minutes. This can be made a day ahead of time and refrigerated overnight.

Melt the half a stick of butter in the microwave. Lay out 6 tortillas and brush butter over them, covering them completely. Sprinkle the Buttered Cinnamon Toast over the tortillas,  covering them completely. Cut the tortillas into wedges and arrange on the baking sheet. Bake for approximately 7 minutes or until crispy.
